Sweet Potato Breakfast Hash

I’m usually the kind of person that goes for sweet breakfasts, but every now and then, I get the urge for a savory dish. This Sweet Potato Breakfast Hash is truly the perfect plate! I love dishes like this because you can really customize them to your liking with whatever your heart desires. This specific recipe is complete with cubed sweet potato, shaved Brussels sprouts, chicken apple sausage, and spinach - all topped off with some sliced avocado and a fried egg!

Sweet Potato Breakfast Hash:

INGREDIENTS

-1 small-medium sized sweet potato, cubed

-1 cup shaved Brussels sprouts

-1-2 handfuls of spinach

-1 chicken apple sausage, chopped (I love the one from Trader Joe’s!)

-Salt, pepper, and garlic powder to taste

-1/2 sliced avocado

-1 egg, fried

INSTRUCTIONS

  1. Place the cubed sweet potato in a microwave safe bowl with about 1 tablespoon of water and cover with saran wrap. Microwave for 1 minute, 45 seconds-2 minutes

  2. Heat a pan over medium heat with some coconut oil spray, and sauté sweet potatoes until they brown a little bit on the outside. Then, throw in your shaved Brussels sprouts + spinach + chicken sausage and season with salt + pepper + garlic powder. I sautéed mine for about 2 minutes until everything was lightly crisped

  3. Served with some sliced avocado and fried egg topped with Everything but the Bagel seasoning + red chili flakes
