Lemon Parmesan Roasted Brussels Sprouts

Whenever I go out to eat, there will never be a time when I don’t order a form of Brussels sprouts as an appetizer. They’re seriously too good to pass up!

Because Brussels sprouts are such a favorite of mine, I figured it was time to make my own homemade version. Without further ado, I present these Lemon Parmesan Roasted Brussels Sprouts! They’re bright, zesty, and packed with some amazing flavor. Whether you’re making them just for your meals throughout the week, a family dinner, or an appetizer for a get together with friends, these will definitely be a pleaser!

Lemon Parmesan Roasted Brussels Sprouts

INGREDIENTS

-1 pound Brussels sprouts

-1 tbsp extra virgin olive oil

-Juice of 1 lemon

-1/2 tsp each salt & pepper (more to taste)

-3 tbsp parmesan cheese (grated or shredded)

INSTRUCTIONS

  1. Preheat oven to 400 degrees

  2. While oven is preheating, halve your Brussels sprouts, and place into a mixing bowl. Drizzle with olive oil and lemon juice, season with salt and pepper, and toss to ensure Brussels are coated evenly

  3. Place your Brussels sprouts on a parchment lined baking sheet, and bake for 10 minutes

  4. Remove from oven, sprinkle with your parmesan cheese, and bake for an additional 10-12 minutes, or until the Brussels are crisped, not brunt, on the outside

  5. Serve immediately or store in an air-tight container in the fridge for up to 4 days
