Peanut Butter Cookie Dough Bites

When I was younger, I won’t lie, I was ALWAYS sneaking some leftover cookie dough from the mixing bowl. Eating raw cookie dough is obviously not the safest thing to do, so with that being said, I have lived for the edible cookie dough craze! So here is my healthy take on it!

For the peanut butter in this recipe, I used some of this peanut butter powder. Any nut or seed butter will work great here, however.

Peanut Butter Cookie Dough:

-1/2 cup peanut butter powder mixed with 1/4 cup + 1 tbsp water

-1 cup almond flour (any flour will work besides coconut)

-1/4 cup maple syrup

-1 tsp vanilla extract

-pinch of sea salt

-1/2 cup chocolate chips or chopped chocolate bar

  1. Mix peanut butter + almond flour + maple syrup + vanilla extract + sea salt in a mixing bowl until a cookie dough-like consistency is formed (may need to add an extra 1-2 tablespoons of flour to thicken), then fold in chocolate chips

  2. Place in the fridge for 30 minutes to set

  3. Use a cookie scoop or heaping tablespoon to form dough bites, let set in the fridge once again, and enjoy!

*Store in an air tight container for up to 5 days, or freeze for later.
